peach pie

fresh peaches on long island are beyond heavenly when they’re in season.  you take one bite and juices start running frantically down your arm, chin, everywhere conceivable.  those peaches make a great jam.  grabbing some peaches just before they get to that point, when they are a little firm but still super fragrant, those are peach pie peaches.  and don’t be fooled, peeling peaches is no small task.  it’s a sticky job and someone’s got to do it. you can count us for that, we make a pretty mean peach pie.  come visit us if peach pie is your thing, we will be in long beach today at the kennedy plaza farmers market from 9am – 2pm.

a good s’mores is to summer as hot cocoa is to winter.

the perfect way to end a summer day spent by the ocean is to spend the night by a campfire in a cozy sweatshirt; the lingering smell of sunscreen on your skin and the taste of salt water on your lips.  long wooden sticks, marshmallows placed on the ends rotating endlessly for the perfect melt and char.  graham cracker squares layered with rectangles of ever so meticulously placed chocolate awaiting that toasted marshmallow. yum. we do a pretty good job replicating this experience all in one single tart.  each bite, better then the next from our hand-crafted graham cracker crust layered with a salted chocolate filling and topped with a soft pillowy hand-made marshmallow.  we suggest you try some for yourself.

today is national ice cream sandwich day…

memories of the ice cream man are flooding back just at the mention of ice cream sandwiches.  those chocolate chip cookie ice cream sandwiches filled with vanilla ice cream and rolled in mini chocolate chips were nostalgically delicious.  

recently, having been at the local park with the kiddies,  a few were purchased.  and a few were eaten.  but, the flavor most certainly did not live up to the memory of what they once were.  it’s hard to say if more mature taste buds are the reason why it wasn’t quite so delicious? or is it due to a change in formula because of newly imposed ingredient restrictions of things such as trans fats.  either way,  it is so quick and easy to make your own at home.  below, is a favorite of our spin on the traditional chocolate chip cookie ice cream sandwich.  we would love to hear some of your ideas!

recipe : cherry chocolate chip ice cream sandwiches

8 – butterscotch*s cherry chocolate chip cookies

1 pint – pistachio ice cream (any flavor really will suffice)

1/2 cup – mini bittersweet chocolate chips or chopped chocolate chunks

Leave ice cream out on the counter until soft enough to scoop.  place 4 cookies upside down on a freezer safe dish.  scoop about 2 ounces of ice cream onto each of the 4 cookies. next, place remaining 4 cookies right-side up on top of the ice cream. gently squeeze each cookie sandwich together so the ice cream starts to peak out the edges.  evenly spread the mini chocolate chips on a flat dish.  roll ice cream sandwiches in chips and place back onto freezer safe dish.  place in freezer for 10 minutes to allow the ice cream to firm up.  enjoy!

fun fact : the fourth saturday in july has been hailed as the national day of the cowboy. it is a day to celebrate american cowboys and cowgirls for their influence on our culture, including their love for the land.  we can appreciate that sentiment, those of us at the farmers market share a love for the land as well.

here we have our cowboy oat chunk cookies chock full of dried fruit and bittersweet chocolate chips.  sorry, but all research as to how these cookies gained their name came up empty.  let us know your theory!
